Our Story

Paul Schat brings 59 years of baking experience to every loaf and pastry we create. Having worked side by side with his grandfather, a master baker who trained in Europe, Paul continues a rich family tradition that spans generations.

Trained at the Culinary Institute of America, the Cordon Bleu, and in Europe, Paul opened his first bakery at age 23 in Mammoth Lakes, California. After 16 years in Carson City, we're proud to serve the local Carsonite community with authentic European baking techniques and premium ingredients.
